USDA’s new unseasoned chicken strip provides school chefs with versatile and healthy options.
School lunches have evolved since many of our childhood days to keep pace with new dietary guidelines and school meal patterns, but one food has been an enduring component: chicken. The popular protein graces the center of the plate in a variety of forms and flavors, and the new USDA Foods unseasoned chicken strip provides school nutrition professionals with a versatile and healthy option to add to their recipes. USDA develops new products for the National School Lunch Program (NSLP) based on feedback from states and school districts. Here’s a behind-the-scenes look at how chicken flies the coop from farms to a pilot program to cafeterias across the country.

When flood waters tore through the levee along Mill Creek in western Arkansas in May 2013, the small unincorporated community of Y City in Scott County sustained massive damage. Mill Creek rose more than 19 feet destroying lives, homes, businesses and a levee.
Flood damage covered a five-mile area and killed five people. A month later, northwestern Arkansas was hit with record rainfall and subsequent flooding again threatened Y City since a 900-foot section of the previously damaged levee was still in need of repair. Read more »

Kao Her is a self-taught poultry farmer. Everything he knows about poultry farming he learned over two weeks with the farm’s previous owner and nine years of on the job trial-and-error.
“I’ve learned a lot by mistake,” said Her, a member of the Hmong community. “My cousin always told me to do my research before getting into something new. But that’s never been my way of doing things.”
Her houses 235,000 broilers, or meat chickens, in six poultry houses in the small town of Noel, Missouri, located just six miles northeast of where Missouri, Arkansas and Oklahoma intersect. He walks three miles a day through his 500-foot and 600-foot houses checking on the chickens that help provide for his family. Farming has a huge presence in Arkansas, as evidenced by the results of the recent Census of Agriculture. In 2012, our state ranked 14th in the nation in value of agriculture products sold. That year Arkansas farmers sold $9.78 billion worth of crops and livestock!
Our state cuisine is the perfect indicator of our state’s farming. Rice is a staple in our kitchens, and not surprisingly, Arkansas rice growers led the nation in production of this important crop. In 2012, 1.29 million acres of Arkansas farmland were dedicated to rice production. Almost half of all U.S. rice came from our farmers that year. Read more »
Larry E. King worked with NRCS to build a seasonal high tunnel on his farm in Whitley County.
Larry E. King was raised in a family with farming roots. The very land he now farms in McCreary County, Kentucky was purchased by his mother during World War II. He remembers his mother telling him, “If we didn’t raise it, we didn’t have it.”
In his late teens, King raised strawberries on the farm. His life moved away from farming at 17 when he followed in his two brothers’ footsteps and joined the Air Force.
For six years, King was stationed out of Little Rock, Arkansas where he worked with the mobile support systems out of the Military Airlift Command. After his military assignment, he finished college and worked for the U.S. Forest Service Civilian Conservation Corps. After a long career with the Forest Service, Larry retired a few years ago, bringing him home to the 34-acre family farm. Read more »
