Some wonderful memories are born around a fire ring. But whether you are camping, “glamping” or sitting with friends and family in your backyard, waning evenings typically include one campfire staple: marshmallows.
So, on the eve of National Roasted Marshmallow Day (Aug. 30), we pay tribute to the sweet ingredient that makes any form of outdoor gathering, well, sweeter.
For some, the best use of marshmallows is as the gooey main ingredient of s’mores. Take a graham cracker, place a section of chocolate on it, and then carefully place a freshly roasted marshmallow on top of the candy bar. Top the marshmallow off with another graham cracker, carefully squeezing the campfire dessert sandwich together as the hot marshmallow melts the chocolate. Read more »

As a registered dietitian, I’m a big proponent of nutrition education for kids and adults alike. MyPlate On Campus, USDA’s initiative that promotes healthy eating on college campuses through peer-to-peer education, is a unique effort to reach young adults during a key life stage. The program now boasts over 2,300 MyPlate On Campus Ambassadors who inspire and promote healthy food habits at universities and colleges nationwide. College – a time of transition, not only in an academic sense, but also in a personal “taking charge of your own health” sense. Most first year students are thinking about all the choices they get to make without guardian oversight, including their food choices! They can now choose what and when to eat and drink for themselves. Mom and Dad are no longer telling them to “stop with the junk food,” “clean the plate,” or “eat their veggies”. Although this seems like the ultimate dream come true and the bells of freedom are ringing, students without the knowledge and skills to make healthy food choices may not be getting all the nutrients their bodies need to stay healthy! To kickoff National Nutrition Month, USDA is again celebrating National School Breakfast Week (March 3 – 7) to support the health and well-being of our nation’s children. National Nutrition Month is the perfect time to highlight the essential role nutrition plays in sustaining healthier lives. A well-balanced breakfast serves as an important first step to a healthier life—and a healthier next generation!
The case for breakfast is a strong one. Research reveals that students who consume breakfast make greater strides on standardized tests, pay attention and behave better in class, and are less frequently tardy, absent or visiting the nurse’s office. Eating breakfast is also positively linked with maintaining a healthy weight – and avoiding health problems associated with obesity. Given the current rates of childhood obesity and related health problems, it’s vital for children and families to eat healthier meals and snacks throughout the day.
Studies also show that children who skip breakfast are at an academic disadvantage: They have slower memory recall, make more errors and are more likely to repeat a grade. Read more »
DC United Mascot Talon helped us promote MyPlate and the importance of physical activity and proper nutrition.
The DC United Soccer Club held its “Fall Kick” a couple weeks ago and I was happy to attend and help them mark the end of the fall season. The “Fall Kick” brought together youth ages 6-12 from across the District and Maryland to RFK stadium making it a perfect event to reach out to the local community and spread FNCS’ message of good nutrition and physical activity.
The event featured tournament style matches, DC United players and mascot Talon, music, and educational games involving nutrition and healthy lifestyles. Around 400 kids, their coaches, and parents visited our booth to learn about proper diet and nutrition. I brought with me a set of engaging games such as “Duck, Duck, Fruit!” and the “Eat Smart. Play Hard. Relay” as activities to teach the children key elements to healthy eating. Read more »
RISE Volunteers with the People’s Garden national leadership team at Grandview Elementary School
In 2011, Washington State University won a USDA People’s Garden School Pilot Project grant. The University used the funds to start the “Healthy Gardens, Healthy Youth” project, a multi-year research project that engages elementary students in creating edible gardens in schools across the country. School gardens are an effective way to introduce kids to healthy foods and create a passion for agriculture and Washington State is helping lead the way. We’re excited to provide an update on how the project is going. The following post was written by Brad Gaolach, the Project Director for the program.

Grandview Elementary School in Monsey, NY is one of 50 schools across the U.S. taking part in USDA’s People’s Garden School Pilot Project – “Healthy Gardens, Healthy Youth” (HGHY). This research and education project aims to understand the impact of school gardens on fruit and vegetable consumption, physical activity, science and math learning, and other outcomes.
Grandview Elementary also enjoys a unique partnership with another research project: “Retirees in Service to the Environment,” or RISE. Created by Cornell’s Institute for Translational Research on Aging, RISE provides opportunities for older adults to become involved in local environmental projects. Research has shown there are greater mental and physical health benefits from environmental volunteering compared to other types of service. As environmental stewards, older adults not only gain from being engaged in civic issues, they also contribute their knowledge and passion to sustaining the environment for future generations.
